Gluten-Free Hamantashen

7 oz. butter
8 oz. cream cheese
1/4 c. sugar
1 tsp. vanilla extract
2 c. gluten-free flour blend + extra flour for handling the dough
Filling Suggestions
Apricot Jam, strawberry jam, prune butter (pour hot water or apple juice over prunes to cover. Wait 5 minutes. Blend with stick blender, blender or food processor. Could also use dried apricots the same way. Add a pinch of cardamom for an exotic, Persian feel), or poppy seed pie filling
In a mixing bowl, cream the butter and cream cheese together. Add the sugar and vanilla and mix until smooth. Let the mixture come to room temperature. Then, add the flour and mix lightly. Refrigerate the dough for an hour or more. Preheat the oven to 350 degrees F.
To make the hamantashen
Roll the dough out to about 1/8 of an inch. Using a drinking glass dipped in flour, cut out circles from the dough. Place a teaspoon of filling in the center of the circles. Pull up the sides and pinch three corners to form a triangle with filling showing in the middle. Place on baking sheet and bake for 20 minutes or until brown.
Paint dough with beaten egg and honey before baking.
